 The Ambräusianum is Bamberg's newest and smallest brewery. It is a true experience as the mash kettle, copper and straining vat are positioned in all their copper glory in the middle of the inn, enabling the guests on occasion to witness the brewing process as it happens.
Mr Ambros Mahr, the youngest son of a traditional Bamberg family, which has been making liqueurs since 1809 using the recipes of old Benedictine monks, fulfilled his lifelong dream when he spontaneously bought the small, almost new brewing equipment for his parental home, and created Bamberg's first brewery in the middle of the inn. The brewing equipment which was built by Bamberg-based Caspar Schulz, which just happens to be the world's oldest brewery machine factory, had a colourful past before finally returning home: originally produced for the well-known Berlin film company UFA, it was moved to the equally famous restaurant Aschinger on Berlin's Kurfürstendamm, subsequently finding shelter at an inn in Volkmarsen, which paradoxically suffered its financial demise due to the hot summer of 2003. It appears the extreme heat made the locals so lethargic that they either spent all their free time at the open-air pool or inside their cool, shuttered homes with a cold crate of supermarket beer. Whatever the case, Mr Ambros Mahr brought the machinery back to Bamberg where it now pleases both the eye and the tastebuds in its new home.
Three kinds of beer are brewed and are on tap here: a light, a dark and a wheat beer (seasonally also a strong Doppelbock beer), all of which are left cloudy, making them delicious to the taste, pleasing to the eye and, because of all the vitamins locked inside the yeast, healthy for the body. In the brewery's stylish interior, the freshly tapped beer can be drunk directly at the bar, in the inner court which is covered with a glass roof, or at the tables in the spacious rooms.
