Palate delight off the peg
During the Franconian asparagus harvest, every stick is a culinary bull"s eye.

The Franconian asparagus is praised as «eatable ivory», «royal vegetable» or «spring air in sticks». And the region of Bamberg enjoys an excellent reputation in travels for gourmets. Freshly cut, «the white gold» is offered in Hallstadt or Strullendorf. Parking places serve as trade centres, the Bamberg vegetable market on the Maxplatz is the asparagus eldorado. Today, the gardeners distinguish white, violet, violet-green and green asparaguses. The most popular sort is the ivory pale asparagus. Before the harvest, barriers are accumulated over the plants, the shoot has to be always covered by soil. It is a guarantee for the white colour. The digging is a pure work done by hand. Every single stick has to be cut by hand, before it breaks the soil. White asparagus is particularly tender and distinguish itself by its mild taste.
You can get persuaded of it in the high Bamberger gastronomy during the season of the asparagus. Fresh asparaguses have their heads closed, and the asparagus stick is shining and firm.
